Wuz Cookin: Potato, Carrot & Onion Pancakes

I've been cooking up a storm this week! Today I made these potato pancakes for lunch. I've made these before but was too hungry to bother taking photos or writing a blog post about it. Usually I make these alone but I had a little helper this time around. Her blog information will also be linked right here if you'd like to check her out! :) Now to the recipe...

Ingredients (Makes around 7 pancakes):

1. 4 medium potatoes

2. 1 carrot

3. 1 medium sized red onion

4. 1 egg

5. around 1/4 cup of flour (depending on what consistency you have)

6. salt, pepper & cayenne

7. olive oil for frying (any oil is fine)

Instructions:

1. Grate the potatoes, carrot and onion into a bowl

2. Season with salt, black pepper & cayenne

3. Add egg and mix

4. for a thicker batter, add the flour

5. Shape into patties and fry on a hot pan with olive oil

6. Cook till golden brown and place on a drying rack to remove excess oil

Overall, this recipe took less than 30 minutes. It's pretty easy for students to do and very affordable as well. I would advise to actually remove excess water from the vegetables by squeezing with a kitchen towel. I completely forgot that step but you could just add more flour to thicken the batter. You don't have to add the carrot and onion but it does add to the overall flavour of the dish.
