Wuz Cookin: Baked Peri-Peri Mustard Chicken with Buttered Vegetables

Back again with another recipe! I made this yesterday for dinner for Emily to try and I think it went pretty well. Again, I have made this time and time again because it's quick and affordable. Here's all you need:

Ingredients (1-2 people):

Chicken

1. 1 chicken breast cut into bite sized pieces

2. 1 medium onion

3. 2-3 cloves of Garlic

4. 1-3 Tbsp (Depending how spicy you like it) Nandos Extra Hot Peri-peri sauce

5. 1 Tbsp Wholegrain mustard

6. Salt & black pepper

Vegetables

1. 1 Tbsp Butter

2. Broccoli

3. Mushrooms

4. Onion & garlic

5. Salt & black pepper

Instructions:

Chicken

1. Finely chop onions and garlic (split into half portions)

2. Add chicken into a large bowl then add half of the onions and garlic

3. Add Peri-peri sauce & wholegrain mustard then mix well

4. Season with salt & pepper

5. Place chicken on a baking sheet on a tray and bake on medium-low(180 degrees celcius) for around 7 minutes

Vegetables:

1. Blanch broccoli in hot water for about 2 minutes then drain

1. Add butter to a pan

2. Once butter has melted, add the balance onions and garlic

3. Sauté till onions are translucent(around 2 minutes)then add the broccoli and mushrooms

4. Fry for another 2 minutes then take off the heat.

Plate up and feast!

I used a toaster oven that's why I said bake on medium-low. It's a nice investment if you're a student and need to get some cooking done. You can even bake cookies in them! Anyway hope you enjoyed this post and try making this at home. Alsooo, if you don't like the extra hot peri-peri sauce, you can definitely replace that with which ever flavour you prefer. Same goes for the vegetables. Peas or long beans would be great with this dish as well.
